I’ve seen comments regarding the boys getting a TV show and one lately about the quality narration and I would agree….Bob is a pro no hesitation no mincing words….first class.

Would scoring the fat back help the herbs to penetrate — the fat is the best part for us “paleo” eaters; nothing like bbq brisket.

Does marinade cut down the need for a longer cook time or is it slow and go regardless. I guess if I’m going to walk away from the meat and come back to it I would need to use the oven or a smoker right?

@poopfish100 has a tiny brisket man! I would say 3-4 hours. I always buy 10 pounders and cook them on my smoker for 1 hour per pound at around 250.
